Let’s talk about our beloved, stress reliever, a friend in times of need: Chocolate. But, let’s talk about Keto Chocolate!

Do you know that cocoa was introduced as a medicine that promoted health? Spanish conquerors introduced it to Europe way back in the 16th century.

Cocoa powder is made from cocoa paste – also called cocoa liquor – which is dark and bitter in taste. This liquid is passed through a process in which it is pressed and around three-quarters of cocoa oil – also called cocoa butter – is removed and the remaining component is called cocoa cake. This cake is then crushed into cocoa powder.

You might be surprised to know that cocoa powder is healthy for us. It is rich with polyphenols, which are natural antioxidants present in foods like vegetables, fruits, chocolate, and tea. Polyphenols reduce inflammation, lowers blood pressure, and improves blood sugar levels.

Before you run to the supermarket to grab yourself a large packet of a snickers bar, you should know that for companies to make the chocolate sweeter, they usually process and heat the cocoa which decreases or completely loses its health benefits.

This and the added sugar in commercial chocolates makes it unsuitable for us to consume them on a ketogenic diet. But this doesn’t mean you can’t have chocolate or ripe the benefits of cocoa powder anymore, here is an easy way of making your own dark chocolate.

If your keto-friendly sweetener is in the crystalline form, make sure you pulverize it to a powder before using it, or else you won’t get the smooth chocolaty texture.

 One variation of this keto chocolate is keto milk chocolate. All you need to do for that is follow the same recipe and just add a cup of full-fat milk powder or unsweetened coffee powdered creamer, or even unsweetened coconut milk powder.

NOTE: You can also also use any Vegetable Butter or other that is solid at room temperature.

Step 1

Melt the unsweetened cacao butter by putting it in a bowl and then heating it in the microwave oven for 15 to 20 seconds. Take it out, stir it, and placing it in the microwave again to heat it for another 15 to 20 seconds. You'll need to keep repeating this process until the solid butter melts completely.

Step 2

Add the powdered sweetener and cocoa powder to the melted butter and mix it well. You can also use a hand blender or food processor to make sure all ingredients are nicely combined.

Step 3

Pour the prepared liquid chocolate mixture in a silicone mold or any other container of your choice but remember to first place a cling wrap on it, for making it easy to pull out the chocolate once it solidifies. Smooth the top and tap the mold a couple of times on the kitchen counter for it to spread out evenly.

Step 4

Place the chocolate filled mold in the freezer and let it sit there for 20 to 30 minutes.
