Directions

Step 1

Preheat the oven to 400°F (205°C).

Step 2

Slice the chicken breasts into halves lengthwise and season it with some salt and pepper.

Step 3

Now for the coating of the chicken: beat the eggs in a shallow bowl, in a second shallow plate or bowl put the almond flour and in a third bowl add the parmesan, oregano, garlic powder, onion powder, paprika, and some salt and pepper.

Step 4

Put an iron skillet on medium flame. Add the avocado oil and let it heat.

Step 5

Dip the seasoned cut chicken breast in the almond flour first, then coat it with the beaten eggs and finally press it in the parmesan mixture. Add the coated chicken to the heated skillet and cook it for around 3 to 4 minutes each side, until the chicken gets a lovely golden shade.

Step 6

Place the cooked chicken in a casserole oven dish. Drizzle some tomato sauce over the chicken and top it with the mozzarella shreds.

Step 7

Bake for 10 to 15 minutes until the mozzarella melts. you can also broil for 2 to 3 minutes to make mozzarella have a nice golden color.

Garnish this yummy chicken parmesan with some basil and grated parmesan. For a nut-free chicken parmesan, you can use pork or chicken rinds and some flax meal and pulverize them together in a food processor, and use it in place of almond flour.
