Keto Enchiladas

Normally, Enchiladas will do a pretty good job at knocking you out of Ketosis in a single sitting, but these Keto Enchiladas are a whole different kettle of fish (Note, there are no fish or kettles needed for this recipe).

The tortillas are the most ingredient heavy part, so we’ve separated the recipe into 2 parts here. Ingredients for the Tortillas are below:

  • 6 Whole Eggs
  • 1/2 Teaspoon Salt
  • 1/4 Cup Heavy Cream
  • 1/2 Teaspoon Chilli Powder (or get some real Chillis if you prefer fresh)
  • 1/2 Teaspoon Garlic Powder
  • 1/4 Teaspoon Black Pepper
  1. Combine all ingredients and whisk until well mixed.
  2. Pour into a greased/non stick frying pan/skillet on a medium heat and cover for 2-4 minutes. These will want to cook through, and you can flip for an extra minute if you want to be really sure they’re done.
  3. Continue until you’ve got no tortillas mix left. We ended up with 6.

Step 1

Set your oven to 400˚F (200˚C). While this is heating up, start to cook your sausage in the pan on a medium to high heat. Make sure this is cooked thoroughly. About 5-8 minutes should do it.

Step 2

Take your cooked meat and place inside the Tortillas wraps. Fill to your desired amount and place gently into an oven safe casserole dish or baking tray.

Step 3

Top with cheese, enchilada sauce and then moire cheese. Bake until the cheese is fully melted. We like to go anywhere between 10-15 minutes and really melt that cheese until it starts to go a little hard. Next, serve your Keto Enchiladas and enjoy!
