Bacon & Asparagus Keto Frittata

Whisk together eggs and grated goat cheese until light and frothy. Add salt and pepper (optional) and whisk to combine.

Step 1

Preheat a lightly oiled, non-stick frying pan over a medium to high heat and whisk together eggs and grated goat cheese until light and frothy. Add salt and pepper (optional) and whisk to combine.

Step 2

Cook the bacon until crispy and the onion is soft, for about 5 minutes. With a slotted spoon remove from the pan and dry the bacon on a paper towel.

Step 3

Preheat the oven to 188 C or 356 F degrees. Lightly oil an 8 in or 20 cm ovenproof dish. It can be round or square.

Step 4

Snap the woody end from each asparagus spear. Cut asparagus into a 1.5 in or 4 cm length, separating the tips.

Step 5

Return the frying pan to heat and add asparagus. Cook until asparagus are tender.

Step 6

Pour eggs over and stir to combine.

Step 7

Add bacon and cook for about 1 or 2 minutes.

Step 8

Put the frittata into an ovenproof dish, add chopped parcel on the top. Place it on the oven tray, then bake the bacon asparagus frittata in the preheated oven until the top is golden brown.
