Lazy Keto Meals #1: Salami Cream Cheese Wraps

  • 8 thin slices Genoa salami
  • 4 oz. garden vegetable cream cheese, softened (113 grams)

This recipe is as easy as it gets. Simply lay out your slices of Genoa salami and spread one tablespoon of garden vegetable cream cheese on each slice in a thin, even layer. Roll the slices tightly and serve. Store leftovers in an airtight container and refrigerate.

Not a salami fan? Try this recipe with sliced turkey, Keto-friendly smoked ham or prosciutto.

Lazy Keto Meals #2: Blue Cheese Stuffed Olives

  • 12 large, pitted green olives
  • 4 oz. blue cheese of any variety (113 grams)
  • Heavy cream (optional)

If you like a little salty funk during snack time, this recipe is for you.

Crumble your cheese in a small mixing bowl. If your cheese is too hard or crumbly for stuffing, slowly add heavy cream until you have a soft mixture. Using a small spoon, stuff each olive with the blue cheese filling.

You can also fill a pastry bag with a small tip and pipe the cheese into the olives. Store leftovers in an airtight container and refrigerate. To take this recipe a step further, try marinating your blue cheese stuffed olives in extra virgin olive oil and a blend of Italian herbs and spices.

Lazy Keto Meals #3: Barbecue Kale Chips

  • 1 large bunch of fresh Kale
  • 2 tablespoons olive oil (30 grams)
  • 1 tablespoon low carb barbecue seasoning

Just because you eat a Keto diet, it does not mean you have to miss out on the satisfying crunch from a dry, salty snack.

To make this lazy Keto snack, start by preheating your oven to 375 degrees Fahrenheit (190 degrees Celsius.) Next, clean a large bunch of fresh kale leaves.

Dry the leaves thoroughly, remove the stalks and tear into bite-sized pieces. In a mixing bowl, toss prepared kale leaves, olive oil and barbecue seasoning until the leaves are thoroughly coated. Place kale mixture onto a baking sheet in a thin layer for maximum crisp factor.

Bake for 10-15 minutes or until dry. For crispier chips, toss halfway during baking process. Bonus tip: try this recipe with taco seasoning, garlic salt or Italian herbs seasoning for flavor variety. Store in an airtight container at room temperature for up to two days.

Lazy Keto Meal #4: Cucumber, Turkey and Cheese Mini Sliders

  • 1 large cucumber
  • 8 slices of deli turkey breast, thinly sliced
  • 8 slices of cheddar cheese, thinly sliced

This is another lazy Keto snack recipe that comes together in moments. Peel and slice one large cucumber and slice into rounds – about 1/2in or 1cm in thickness. Slice the turkey and cheddar cheese slices into quarters, or to roughly the size of the cucumber diameter.

To build the sliders, start with a cucumber round as a base. Then add a quarter slice of cheese, a few pieces of turkey breast, more cheese and top it off with another cucumber round. Hold the sliders together with a toothpick and serve.

Bonus tip: To give this recipe an extra kick of flavor, try substituting the cucumbers with pickle slices.

Spicy lovers, this one’s for you. Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius.) Slice the jalepeno peppers in half length-wise and carefully remove ribs and seeds. In a small mixing bowl, combine cream cheese and shredded cheddar cheese.

Using a small spoon, spread the cream cheese mixture into the empty jalepeno pepper halves. Bake for 10-15 minutes or until golden brown and bubbly. Serve and enjoy while hot. Bonus tip: add sliced, cooked bacon to the cream cheese mixture for added smokey flavor.
